beefy stew with mushrooms
INGREDIENTS
2 lb John's Farm Organic Stew Meat
1/4 C flour
1 t salt
1/2 t black pepper
1/2 t dried thyme
3/4 C beef broth
1/4 C tomato paste
1/4 C red wine
2 garlic cloves, minced
8 oz. wild mushrooms or button mushrooms (sliced)
1 C carrots, sliced
1/2 C onion, diced and sauteed to tender
1 lb red potatoes, cut to bite-size
1 T butter or olive oil
fresh parsley to garnish
DIRECTIONS
In small bowl, combine flour, salt, pepper, and thyme. Place beef in 5 qt (or larger) crock pot. Sprinkle with flour mixture and toss to coat. Saute’ onions until slightly tender. In small bowl combine beef broth, tomato paste, wine, onions, and garlic. Mix well, all to beef in crock pot. Add potatotes, mushrooms, and carrots to crock pot, mix well.
Cover and cook on high for 5-6 hours or low for 8-9 hours, until vegetables and beef are tender. (do not lift lid or stir during cooking time.) When ready to serve, stir well and garnish with fresh chopped parsley.
